My version of Pizza pockets

1 pkg. of pita pockets
1 lb. of sausage
Mozzarella cheese
Pizza sauce (for dipping)

I found the pita pockets in the bakery area at Dillons.  Cook the sausage.  Stuff the pitas with the sausage and mozz. cheese, and bake in oven for about 10-15 min.  This is super easy and the family will really enjoy!! Than dip them in the pizza sauce.  A quick supper for a busy Mom!!!

This weeks projects

This we focused on sorting.  I purchased cylinders and triangles from Target in their dollar section.  These work great for sorting and recognizing the colors.  
I gave them M&M's to sort by color and count.  They ate the M&M's while they counted!!!  This tied into our letter of the month, letter "M". 
I taped numbers to the bottom of cup and had them count pom poms and put into the cups.  You can use baby jars for this also.  (We didn't have any, so we used our painting cups.)

The daycare kids LOVE to use glitter.  So I let them trace the letter "M" with glue sticks and cover with glitter!!  


I found a neat border at dollar tree to make our new bulletin board.  (I love that store!!!) I had some left over so we cut them up to make a color matching game for the younger ones.
My daughter likes to pretend to be a teacher and do projects with the daycare kids, Hmmm wonder where she gets that from, since they didn't have school today I let her and her friend take over on making  a fun project for the kids.  They came up with using painter's tape (have lots  of that) and make fun designs out of the tape on their construction paper.  They actually loved peeling and taping, this project lasted for about an hr.  Way to go Haylee!!

So here's the finished art project, pretty cool!! I think we'll have to try it again!!  This is a quick wrap for our week's projects.

Selena Gomez Concert

My daughter & I had a girls day out with our friends to go see Selena Gomez at the State Fair.

I was pretty excited too!!
We didn't have to pay for a $30 tshirt so we made our own, thanks to my friend Valeri for the supplies :)
The girls favorite animal was the alpaca! They were pretty cute!!
I don't know how many times I have been to the State fair and never witnessed this sport.  They ride on their horses and shoot (with guns) balloons.  Chelsea thought it was pretty loud!! It was pretty amusing to watch!

She put on quite a show!!! Luckily for the moms, it only lasted an hour :) It was pretty hot outside, but we still had fun dancing and singing with the girls!!

Chicken Enchiladas

Chicken Enchiladas

I have used several chicken enchilada recipes but nothing seems to compare to this one.  You will have to give it  a try to taste for yourself!! 

1 lb. of cooked shredded chicken
8 oz. of cream cheese
1 small can of green chiles
1pint of half and half
tortillas
1 cup of Monterrey jack cheese

Combine shredded chicken, green chiles, and cream cheese.  Put into the tortillas and roll up.  Cover with the half and half, and top with Monterrey jack cheese.   Bake at 350 for 20-30 min.  Top with salsa and sour cream and enjoy.  This is one of our favorite recipes, Bob made it last night and the kids devoured them!! Sooo Good!

Daily Devotions with my Kids

The older my kids get the harder it is for me as their parent.  Their questions are getting harder to answer, their homework is getting harder, they are becoming more stubborn, and I'm feeling lost as their mom.  As a mom you always want to have the right answer for your kids! The truth is, MOMMA don't know everything!!! So, I decided to make a purchase at the Christian book store in the mall.  I bought a daily devotion book for both of my kids and I to study in daily.  Its geared toward their ages.  I also bought the book "Case for Faith for Kids"  This is a kid friendly book that gives them all the answers, YEAH!!! It answer questions like "Is there a God?" Where did the world come from?"  "If God is good, then why do bad things happen?" So I will be following up on my blog to let you know how these books turn out, so stay tuned!!

Finger Painting Craft

The daycare kids are learning the letter "M" this month, so I had the kids trace the letter "M" with finger paint.  We also made some fun bracelets out of fruit loops to go with our shape (circle) of the month.

Yummy Chicken strips

We love to EAT in our house & both Bob & I love 2 cook.  So I want to share some of our favorite recipes.  Today for lunch We had the best chicken strips & I really do mean they are the best.  Here is the recipe:
Best Ever Chicken Strips:
1 pkg. of chicken strips
1 roll of ritz crackers
olive oil
1 cup of mayo
1-2 tsp. of dried mustard
Mix the mayo and dried mustard in a bowl.  Get your oil bubbly hot on the stove. Dip the chicken in the mayo mixture and then into the crushed  ritz crackers.  Cook the chicken until its nice and crispy.  Then enjoy with a side of home  made ranch or BBQ sauce to dip!!! These are MMM Good!! & the kids will love them too!

Along with the chicken strips I made an old favorite recipe of my dear friend Robbins.  I just found the bottle of Bronco Bob's Raspberry Chiptole Sauce in Dillons yesterday, So excited they quit selling it & now they're selling it again!!! So heres the famous recipe that You'll absolutely love this dip!!
RASPBERRY CHIPOTLE BEAN DIP 2 10.5 oz. cans pinto beans, black beans, or refried beans, drained; 1 large red onion, diced (optional, I don't like onions so we do without); 8 oz. packages softened cream cheese, 1 cup shredded cheddar cheese; 1 Bottle Bronco Bob’s Roasted Raspberry Chipotle Sauce

Drain beans thoroughly and pour into a flatdish. Sprinkle onions on beans. Gently spread cream cheese and cheddar cheese over onions. Pour and spread Bronco Bob’s Roasted Raspberry Chipotle Sauce over cheese layer. Microwave on high for 3 to 5 minutes. Serve with tortilla or corn chips.

Painting CIRcle FUN!!

The big kids are back in school, so its been a bit more quiet in the household!  We are trying to get back on routine with the school year and have a little FUN with the little ones.  We started a new theme for the month "All about ME!" I'm excited to do new projects and activities with the kids!  Today we used the top of the cups and dipped them in paint to make circles on the papers.  We used different sizes of cups to make thin and thick circles.

Here's the finished project!!!   I'll be posting more photos of our fun activities, since I finally figures out how 2 upload pics YEAH!!!
So I dont know exactly Why I started a blog or if I'll even have time to keep up with it.  But I've always wanted to have my own blog.  SO my intentions of this blog, is to   1. have a little me time 2.  share some fun ideas with other mommas  3. because I'VE ALWAY WANTED MY OWN BLOG!!!!
