Spring Bird's Nest Recipe

Haylee & I found a fun and easy recipe to make bird's nest.  This is a simple recipe that you can do with your kiddos.  All you need is half a bag of chow mein noodles, 1 package of butterscotch morsels, and Easter egg candies (we chose M&M's). 

Here are the kids helping Daddy putting the eggs on the nests.  I love that Bob likes to help out when we make things.  He is such a good daddy!!

BBQ Potato skins

I plan on making this recipe also for super bowl this weekend.  

*3 large potatoes

*cooked bacon

*2 T. butter, melted

*1 clove garlic, minced

*my homemade bbq sauce

*cooked BBQ pulled pork

*sour cream and cheddar for topping

Directions:

 Bake potatoes at 350 degrees F. for about 1 hour.  Remove from oven.  Bake strips of bacon in the microwave.  Crumble bacon when cool.  Cut potatoes in half, and spoon out the middle.  Melt butter and add minced garlic.  Brush the potatoes with butter & garlic.  Butter the bottoms.  Cook in the oven for 5 min.  Fill the potatoes with BBQ pulled pork, crumbled bacon, and cheese. Top with sour cream.  

BBQ sauce recipe:
1 cup of ketchup
1 cup of brown sugar
2 cloves of garlic
1-2 tsp of liquid smoke
1-2 tsp of hot sauce
1-2 tsp of Worcestershire sauce
4 T onion minced (optional)
* I usually double this recipe, because I like a lot of BBQ sauce.
Combine all the ingredients in a sauce pan.  Cook over medium heat until boils, stir constantly, boil for 5 min.

Game Day 7 layer Dip

I am planning on making my7 layered bean dip for super bowl this weekend.
Ingredients:
1 can of refried beans
1 small tub of sour cream
1 can of black beans (drained and rinsed)
1 packet of taco seasoning
shredded lettuce
shredded cheese
1/2 cup of salsa
diced green onion
olives (optional, I prefer not to use them)

Use a microwaveable dish and put refried beans at the bottom and black beans on top.  Cook in microwave for 3-5 min.  Mix together sour cream and taco seasoning packet and add on top of the beans.  Top with lettuce, cheese, green onion,  & salsa. Chill.  Serve with tostitos or celery sticks.  I only make simple, fast, Yummy, recipes, & this is one of them!!

BBQ pulled Chicken Sandwich

I made this for supper tonight and it was Delicious!! I make my BBQ sauce it taste so much better than the stores.  You will have to try for yourself to enjoy!
Ingredients you will need
1 lb. of chicken tenderloins (thawed out)
BBQ sauce recipe:
1 cup of ketchup
1 cup of brown sugar
2 cloves of garlic
1-2 tsp of liquid smoke
1-2 tsp of hot sauce
1-2 tsp of Worcestershire sauce
4 T onion minced (optional)
* I usually double this recipe, because I like a lot of BBQ sauce.
Combine all the ingredients in a sauce pan.  Cook over medium heat until boils, stir constantly, boil for 5 min.
Place the chicken in the crockpot on low heat. Cover completely with BBQ sauce.  Cook for 6-7 hrs on low.  Or you can cook on high for 4 hrs.  Once the chicken is cooked, shred the chicken.  Serve on a roll or bun and top it with ranch.  I love cooking in my crock pot and this recipe is super easy and YUMMY!! Enjoy!!

BBQ Meatballs

BBQ MEATBALLS
My kids love these meatballs & so will you!

2lbs of hamburger
2 eggs
1/2 box of crunched up Parmesean Cheez-Its Crackers
I dont measure on the seasonings I just guess
pepper
salt
Chili powder
Ground Cumin
Onion Salt
Garlic Salt'
BBQ Sauce Ingredients:
1 cup of ketchup
1 cup of brown sugar
1 t of Hickory Smoke
garlic and onion salt
First combine the hamburger, eggs, crackers and seasonings.  Roll in a ball and bake at 350 for about 30-40 min.  While that is baking Combine the Ingredients for the BBQ sauce over the stove top cook until a rapid boil.  Then pour over the meatballs and cook for another 10 minutes. 

I like to serve some yummy red potatoes with the meatballs.  Enjoy!!

Crockpot Chicken Flautas

Crock pot Chicken Flautas
Ingredients
1 lb of  chicken
1 small can of green chilles
1 8 oz. tub of sour cream
1 cup of Monterrey jack cheese
small flour tortillas
oil in fry the flautas

This is a favorite of Bobs & mine!! You can use this recipe in the crock pot or cook your chicken on the stove top.  I like using my crockpot so that's what we use!! Cook the chicken  in the crockpot on low for 6-8 hours or on high for 4-5 hrs.  Shred the chicken once its cooked thoroughly.  Then  add in the green chilles, sourcream, & cheese.  Mix it all up.  Let it cook for another 1/2-1 hour in the crock pot.  Then roll up your chicken mixture in the flour or corn tortillas (we prefer the flour).  If you decide to use corn tortillas, they must be microwaved for 10 sec to make them pliable.  (this is an essential tip when cooking with corn tortillas, or else they will break apart when you try to roll them).  Use toothpicks to hold the tortillas together.  Heat the oil in a skillet till it is VERY HOT!! Then fry them until they are nice & crispy. 
These are good with white queso dip and top with sour cream and salsa, & make your favorite Margarita & You have the perfect dinner date for you & your Husband : )

Ultimate Margarita


Ingredients:
1 can of limeade
1 bottle of blue moon
triple sec
tequila
lime and salt/sugar for the rim

Pour the limeade in the blender then use the can to measure your tequila and triple sec.  I prefer clear tequila whatever brand you use is fine.  I also have used different kinds of triple sec as well, any will do. 
Fill the cup with tequila bout 3/4 full then pour into blender and then fill it with triple sec about 1/3 full.  Then add your ice.  I always guess on how much ice.  Blend well then after you blend it, stir in a bottle of blue moon, make sure you don't blend it you'll have a Big MESS!  (Don't Bob look so excited to make these for me!!)  This is the key ingredient to the PERFECT margarita.  Then pour into your favorite margarita glass and call your neighbor up to have a margarita :) and you'll never wana go to Carlos for a Margarita again!! These are the BESt!!  Ask my neighbor, LOL!!!

My version of Pizza pockets

1 pkg. of pita pockets
1 lb. of sausage
Mozzarella cheese
Pizza sauce (for dipping)

I found the pita pockets in the bakery area at Dillons.  Cook the sausage.  Stuff the pitas with the sausage and mozz. cheese, and bake in oven for about 10-15 min.  This is super easy and the family will really enjoy!! Than dip them in the pizza sauce.  A quick supper for a busy Mom!!!

Chicken Enchiladas

Chicken Enchiladas

I have used several chicken enchilada recipes but nothing seems to compare to this one.  You will have to give it  a try to taste for yourself!! 

1 lb. of cooked shredded chicken
8 oz. of cream cheese
1 small can of green chiles
1pint of half and half
tortillas
1 cup of Monterrey jack cheese

Combine shredded chicken, green chiles, and cream cheese.  Put into the tortillas and roll up.  Cover with the half and half, and top with Monterrey jack cheese.   Bake at 350 for 20-30 min.  Top with salsa and sour cream and enjoy.  This is one of our favorite recipes, Bob made it last night and the kids devoured them!! Sooo Good!

Yummy Chicken strips

We love to EAT in our house & both Bob & I love 2 cook.  So I want to share some of our favorite recipes.  Today for lunch We had the best chicken strips & I really do mean they are the best.  Here is the recipe:
Best Ever Chicken Strips:
1 pkg. of chicken strips
1 roll of ritz crackers
olive oil
1 cup of mayo
1-2 tsp. of dried mustard
Mix the mayo and dried mustard in a bowl.  Get your oil bubbly hot on the stove. Dip the chicken in the mayo mixture and then into the crushed  ritz crackers.  Cook the chicken until its nice and crispy.  Then enjoy with a side of home  made ranch or BBQ sauce to dip!!! These are MMM Good!! & the kids will love them too!

Along with the chicken strips I made an old favorite recipe of my dear friend Robbins.  I just found the bottle of Bronco Bob's Raspberry Chiptole Sauce in Dillons yesterday, So excited they quit selling it & now they're selling it again!!! So heres the famous recipe that You'll absolutely love this dip!!
RASPBERRY CHIPOTLE BEAN DIP 2 10.5 oz. cans pinto beans, black beans, or refried beans, drained; 1 large red onion, diced (optional, I don't like onions so we do without); 8 oz. packages softened cream cheese, 1 cup shredded cheddar cheese; 1 Bottle Bronco Bob’s Roasted Raspberry Chipotle Sauce

Drain beans thoroughly and pour into a flatdish. Sprinkle onions on beans. Gently spread cream cheese and cheddar cheese over onions. Pour and spread Bronco Bob’s Roasted Raspberry Chipotle Sauce over cheese layer. Microwave on high for 3 to 5 minutes. Serve with tortilla or corn chips.
